Summer fireweed is in full bloom at many locations around campus.According to the Cooperative Extension Service the perennial plant Epilobium angustoifolium can be harvested for food before it blooms. The shoots are a good source of vitamin C and vitamin A. Young undamaged blossoms can be used in other recipes including vinegar, jelly, honey and scones.
