UAF culinary program bistro to open for spring semester season

Lunch service at the Borealis Bistro opens to the public on Thursday, Feb. 4.

Located at Hutchison Institute of Technology and operated by the University of Alaska Fairbanks Community and Technical College's Culinary Arts and Hospitality Program, the Borealis Bistro creates a "real-world" training experience for students, while also providing delicious, professional cuisine to the Fairbanks community.

A $12 prix fixe lunch (set price) is served from 11:30 a.m. to 1:00 p.m. Thursdays during the spring semester. The menu changes weekly with a different theme. Entrees are served with side dishes, soup or salad and a beverage. A variety of appetizers, dessert and espresso are also available.

At the bistro, students perform in a variety of restaurant positions including seating, serving, ticketing and preparing food. Culinary and hospitality students are taught, guided, and mentored by professional chefs and hospitality instructors.

Reservations are preferred in order to plan the lunch, provide a positive learning environment for students and offer the best service. Lunches are served every Thursday until April 28, except for March 17 and April 21. Please call 455-2902 or email kgaikows@alaska.edu for reservations.
