Dining Services is celebrating October with a fish fry and, of course, all things pumpkin!

October's superfood: Pumpkin
Pumpkins are the round, typically orange members of the winter squash family. Pumpkins originated in Central America and have been a part of American cuisine for centuries. If harvested and handled properly, pumpkins, like other winter squash, can last long into the winter. Pumpkins are rich in the antioxidant beta carotene and pumpkin seeds offer protein and key minerals. Peel, deseed and cook the pumpkin in a variety of ways: boiling, roasting, pan sautéing or stea​ming. You can also roast the pumpkins whole until tender and scoop out the cooked pulp. Don't forget about the seeds. Rinse and boil in salted water for about 10 minutes, drain, dry and roast for about 10-15 minutes in a 350°F oven.​ We will be highlighting this superfood throughout this month at all locations, so stay tuned!

We are really focusing on the convenience of no-bake today for several reasons: time, accessibility and food safety! This recipe is a fun and creative take on a classic, and a perfect example of how to adjust to your situation!

National Seafood Month at Alaska Grill (Grubhub only)
For October, Alaska Grill has added Alaska fried halibut sandwich and tempura battered prawns 'n' chips. The Alaska Grill is open for Grubhub orders Monday through Friday from 11 a.m.-8 p.m.
