The University of Alaska Fairbanks Cooperative Extension Service will host a food preservation series Wednesdays in Anchorage, beginning Sept. 24.

Classes will begin at 5:30 p.m. and will meet for three or four hours, depending on the topic. The subjects include:

• Canning fish and meat in jars, Sept. 24
• Jams and jellies, Oct. 1
• Pickled vegetables, chutney and sauerkraut, Oct. 8
• Sausage and jerky, Oct. 15
• Freezing and drying fruits and vegetables, Oct. 22

Participants may register for one or all of the hands-on classes, which will be taught by Anchorage Extension agent Leslie Shallcross. The first four classes will meet at Viking Hall at 8141 Briarwood St. The Oct. 22 class will be offered at the Extension district office at 1675 C St.
