Got fish? The University of Alaska Fairbanks Cooperative Extension Service offers resources to help preserve the catch.

Extension has online lessons and DVDs on canning basics and canning meat and fish. Free publications may be downloaded on most of these topics from Extension’s online publications catalog, including information on freezing and smoking fish.

The interactive online lessons are located at www.uaf.edu/ces/preservingalaskasbounty and require Adobe Flash Player, which may be downloaded from the site. Check out Extension’s publications and DVD catalog at www.uaf.edu/ces/pubs.

DVDs and online lessons are also available on many other food preservation topics, including making jams and jellies, pickling and drying foods, and making sausage and jerky.

Extension recommends that pressure canner gauges be checked annually for accuracy. Representatives at district offices in Anchorage, Kenai, Fairbanks, Palmer, Delta Junction, Bethel and Juneau will test gauges for free to ensure they are adjusted correctly. For more information, contact your district Extension agent.
