Antioxidants-
New Project on Alaska Native Berries

During the summer, 2003, we collected more than 200 samples of Alaska wild and domestic berries for analysis of antioxidants. Most of the berries are being processed in the chemistry laboratory at our Palmer Research Facility. Preliminary results show very high levels of the antioxidant, caffeic acid in highbush cranberry (Viburnum edule), and as expected, very high levels of vitamin C in rosehips. Many berry pickers from around Alaska are helping us with this project, and it will continue for at least three more years. We are interested in documenting the levels of antioxidants in all of our wild berries as well as determining what happens to those levels when the berries are processed.
