Eating to Nourish

HL1             Session I: Sept. 9, 16, 23, 30

            Mondays 12:15 – 1:30 pm

This series of lectures focuses on eating strategies that promotes nourishment. Coverage includes the basic anatomy and physiology of normal digestion and absorption, eating behaviors, assessing food labels, functional foods that support health, an introduction to micronutrients, and specific nutrient therapies that enhance digestion and absorption. Particular emphasis will be given to whole foods and the nutrients they contain.

Instructor Brian Orr is a licensed doctor of naturopathic medicine – a primary care doctor who specializes in natural therapeutics. Dr. Orr maintains a private practice at Fairbanks Family Wellness and authors a syndicated column pertaining to emerging research on natural therapies.

AARP Driver Safety

HL2             Session I: Sept. 9, 16, 23, 30

Mondays 1:30 – 3:30 pm

No OLLI class fee for this course.  There is a materials fee payable to the instructor at the first class:  $12.00 if you are a member of AARP and $14.00 if you are not.
Designed for motorists aged 50 and older, this eight-hour course helps drivers refine existing skills and develop safe, defensive driving techniques. Topics include vision and hearing changes, effects of medication, reaction time changes, left turns and other right-of-way situations, new laws, and hazardous driving situations. You do not have to be a member of AARP to take the course, and there are no tests. Certificates are awarded to those who attend all sessions. This certificate may entitle you to insurance premium discounts (check with your insurance agent) or having 2 points credited to your Alaska driver’s record. If you have a letter from the court, the charges for a traffic violation may be dismissed upon completion of this class.
Instructor Sue Cole is best known as an artist, but she’s also a certified AARP Driver Safety instructor.

Alzheimer’s and Dementia: What’s the story?

Join us for a four part series highlighting Alzheimer’s disease along with the support and assistance available. Explore the difference between Alzheimer’s and dementia. What is normal forgetfulness and when should I worry? How is communication different for people who have dementia? How can I stay connected and “Be There” for someone who has Alzheimer’s? What resources does Alzheimer’s Resource of Alaska have that can help?

Instructor Joan Adams, Education Specialist, has been a social worker for almost 30 years. She started working for the Alzheimer’s Resource of Alaska in 2005. Joan also cared for her mother who had dementia.

Environmental Medicine

Environmental medicine is a multidisciplinary field involving human health and environmental sciences. In Alaska, areas of concern include indoor air quality, the sulfolane spill in North Pole, hormone disrupters and other environmental toxins. It is incumbent upon us to become discerning about products and compounds we encounter in our surroundings and our community's impact on ourselves and future generations.

Instructor Dr. Mary Minor graduated from Bastyr University in1983 as a naturopathic doctor. She has treated patients in Washington, Connecticut and Alaska. She has worked with many people whose health has been impacted by environmental factors.

Stress, the Silent Killer

Humans can trigger their physiological processes with a mere thought, emotion, or memory. We tend to worry about things that will never happen, past events that are beyond our control, and future issues that may never arise. Inadvertently, we drive ourselves, ultimately, into the arms of the silent killer – STRESS! Strangely, these very same biological responses are instrumental in maintaining our health! Accordingly, what is the biology of human behavior?   This will be the topic of our discussion as it relates to human stress and to such issues as anxiety, the origin of dreams, depression, and aggression.

Instructor Nicholas Deely, M.D., arrived in Fairbanks in 1963, shortly after completing his medical training in Montreal, to become the community’s first pediatrician. Prior to entering the medical profession he was a high school teacher.

Mastering Wine “101”

Whether you are a complete beginner or fancy yourself a wine buff, there’s always more to learn. In this course, you will learn professional tasting techniques and how to identify characteristics that make wine good, the classic varietals (in a blind tasting!) and the components in wine (sugar, alcohol, tannin, acid, and fruit). You’ll gain confidence in food and wine pairing and how to pick out wines within your budget.

Materials fee $80. Enrollment limited to 24.

Instructor Kathy Lavelle has credentials of certified wine professional from the Culinary Institute of America and certified specialist of wine from the Society of Wine Educators.
