>As part of the Back to Basics series in Anchorage, a class on fermentation will be held on Feb. 28. The class will cover kimchi, sauerkraut, kefir, kombucha and other commonly fermented foods. Exotic Forest Pests course flier

>Extension is now offering a self-paced online course on exotic forest pests. The course cost is $60 if seeking CEUs and free if you are just interested in the topic. >Sarah Lewis of the Juneau District Office will teach a series of food preservation classes this spring. Topics include canning soups and sauces, cottage food businesses, fermenting, canning salsa and more. The classes are being offered in partnership with the Juneau Community Schools. >Extension will host a certified food protection manager workshop via videoconference March 6 in Fairbanks, Palmer, Sitka, Juneau, Valdez and Bethel. If you are in another location but would like to attend, that can be arranged. The deadline to register is Feb. 20 so participants may receive class materials and locations for the food safety class beforehand. State regulations require that all food establishments have at least one certified food protection manager on staff. See details here and register online.
